Poblano Night

Dre and Clay came over and we had a Mexican, Rick Bayless Style dinner. The menu was Stuffed Poblano peppers and Poblano Rice. The stuffing was a mixture of cod, roasted tomatoes, onion, garlic, and spices. I think the dishes went well together and they weren't too spicy like some of the things we've made out of that cookbook. We will definitely make the rice again, but I think we'll keep looking for our perfect stuffed pepper!

In case you can't tell from the picture, this dessert was AMAZING. I served it up warm, just out of the oven, with some vanilla ice cream. The cinnamon and pecans complemented the cranberries so well...
