Oatmeal Nutmeg Scones

I love weekends. Don't we all? It's hard to beat the combination of PJ's, a homemade latte, DVR shows, and sleeping in. I usually make myself a smoothie of some kind for breakfast, but I also like to make Ross a little something. This past weekend I made Dorie's Oatmeal Nutmeg Scones. They were a big hit with Ross, so I'm sure I'll be making them again. 




Oatmeal Nutmeg Scones
from Baking: From My Home to Yours by Dorie Greenspan

makes 12 scones


1 large egg
1/2 cup cold buttermilk
1 2/3 cups all-purpose flour
1 1/3 cups old-fashioned oats
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon freshly grated nutmeg
1 stick plus 2 tablespoons(10 tablespoons) cold unstaled butter, cut into small pieces

Center a rack in the oven and preheat the oven to 400 degrees F. Line a bking sheet with parchment or a silicone mat.

Stir the egg and buttermilk together.

Whisk the flour, oats, sugar, baking powder, baking soda, salt and nutmeg together in a large bowl. Drop in the butter and, using your fingers, toss to coat the pieces of butter with flour. Quickly, working with your fingertips (my favorite method) or a pastry blender, cut and rub the butter into the dry ingredients until the mixture is pebbly. You'll have pea-size pieces, pieces the size of oatmeal flakes and pieces the size of everything in between -- and that's just right.

Pour the egg and buttermilk mixture over the dry ingredients and stir with a fork just until the dough, which will be wet and sticky, comes together. Don't overdo it.

Still in the bowl, gently knead the dough by hand, or turn it with a rubber spatula 8 to 10 times. Turn the dough out onto a lightly floured work surface and divide it in half. Working with one piece at a time, pat the dough into a rough circle that's about 5 inches in diameter, cut it into 6 wedges and place on the baking sheet. (At this point, the scones can be frozen on the baking sheet, then wrapped airtight. Don't defrost before baking -- just add about 2 minutes to the baking time.)

Bake for 20 to 22 minutes, or until their tops are golden and firmish. Transfer them to a rack and cool for 10 minutes before serving, or wait for the scones to cool to room temperature.

Yep it's that time of the week... Time for some chatting and cooking :) This was our best all around meal yet!

The Menu:
Grilled Ribeye Steak with Onion Blue Cheese Sauce
Awesome Spinach Salad
Buttered Rosemary Rolls
Dorie's Hidden Berry Cream Cheese Torte

The kitchen got all smokey from cooking bacon. Have you had PEPPERED bacon? mmm.

Please make this whole menu. The WHOLE thing. When I start to think the spinach salad was my favorite part, then I think of the rolls. Now, this isn't going to be your healthiest meal of the week, but you can lighten it up. We used butter substitute on the rolls, used minimal bacon fat in the salad dressing (1 versus 3 TB) by using olive oil instead, AND also used Splenda in the dressing. There is some BIG flavor in this meal. Wonderful. Please try it!!!

Weekend ReCap

Friday night was date night and we had one of the best meals we've ever had. We went to Mark's downtown, which is located in an old, renovated church. I didn't take pictures of our food because I didn't want to disturb our neighbors. To start, we split a heirloom tomato and roasted pepper salad with two types of mozzarella, aged balsamic, and green peppercorn vinaigrette. For an entree, Ross had the special of Kobe beef 2 ways: braised short ribs and steak, with chedder mashed potatoes. For my entree I had grilled jumbo shrimp with a grit cake topped with lump crabmeat. For dessert we had warm white chocolate bread pudding souffle with berries. SO GOOD!!! Best all around meal we've had in Houston!!

Afterwards we met up with my friend Sarah and some of her friends for drinks...

Saturday night Britany came over to hang out and Ross cooked for us!
Ross created fire in the kitchen... to flambay grapefruit and orange for the salad.

And just in case you didn't see my previous post, NATALIE is now engaged!!! The story (and the ring) sound perfect. I'm so happy for them both!!!

Now it's time to wake up my husband and my puppy from their lazy sunday afternoon naps...

Poblano Night

Dre and Clay came over and we had a Mexican, Rick Bayless Style dinner. The menu was Stuffed Poblano peppers and Poblano Rice. The stuffing was a mixture of cod, roasted tomatoes, onion, garlic, and spices. I think the dishes went well together and they weren't too spicy like some of the things we've made out of that cookbook. We will definitely make the rice again, but I think we'll keep looking for our perfect stuffed pepper!

In case you can't tell from the picture, this dessert was AMAZING. I served it up warm, just out of the oven, with some vanilla ice cream. The cinnamon and pecans complemented the cranberries so well...

Our 5th wheel was feeling left out. 

We agreed that this was the best all-around Cook with Steph and Liz meal so far. Everything was great! The unanimous winner was the apple cider vinaigrette on the salad. It was delicious. I thought that the brownies needed more espresso and chocolate flavor, it was just too subtle. The horseradish sauce was a must have for the fish (I forgot it in the fridge till we were about halfway done-it really made a difference!).

Burger and Fries

My college friend Chris came over for burgers on Monday night. We had a good time catching up and the food wasn't so bad either :) We had green chile burgers, sweet potato fries, Mexicali corn salad, and Dorie's applesauce bars for dessert.

We have so many more kinds of burgers to try out of the cookbook! These burgers were good, but not flat out amazing like I thought they'd be. The dessert was delicious! Cinnamon, apples, raisins, pecans... it tasted like "Home".
