Cheese Bread

There's no way to pretend Cheesey Bread Doodles have some secret nutritional value hidden within them because they don't. It's just homemade dough with ham + cheese. You could make these more fancy with some spicy mustard- but kids. Ranch worked well :) I had every intention of making these "pizza rolls" served with marinara however HEB curbside was not able to fulfill my pepperoni aspirations last week so we had to pivot. lunchboxes have been filled for the rest of the week with these rollups :)

Tuscan Sausage Soup

 It's been a minute since I've posted a recipe. This Tuscan Sausage Soup has all the right elements for a quick and easy weeknight meal, with only 9 ingredients. It's a perfect warm comfort food for fall or winter and can be lightened up from the original recipe (ie half heavy cream other half milk, more spinach, etc). Make sure you double the recipe and freeze the other half. Follow the link for more pictures. I finished my soup before remembering pics :)

Concho was Sold

Yesterday it was announced that the company I work for, Concho Resources, was bought by ConocoPhillips. It's definitely bittersweet news, with so much uncertainty which will remain for months to come.

 The great news is that Paige's COVID test came back negative!! The bummer is that the little nugget is still not 100%. This virus was a nasty one. Hoping a solid night of sleep will make her feel brand new tomorrow.

There's a Bug

Little P came down with something last night- "My head hurts mom". there is such a heightened awareness to anything that might be Covid related that I think we're all a bit overly sensitive. P is scheduled to get swabbed tomorrow morning and then we will know more.

Mustang Island

We took our first family trip via Air Ross to Mustang Island for a day at the beach. The girls (especially C) have been asking to go to the beach for so long. Since we missed our family vacation this year due to quarantine, it was much needed. 

The girls beach bucket list included 1- picnic on the beach 2- finding seashells 3- build a sandcastle and 4- jump waves. Mission successful and home in time for dinner! 

The best part was seeing the HUGE smiles on the girls faces. Well to be honest on all our faces. A carefree day at the beach on a beautiful day was just what we needed.

My Birthday Recap

I celebrated another trip around the moon on September 26th, #36! We attended a memorial service in the morning, which was definitely a hard start to the day, but also not something one can particularly plan. Ross, the girls, and my parents really helped turn things around for my "Blue" themed dinner party :) There was Thomas Keller fried chicken curtesy of Ross and quite possibly the best chocolate cake I've ever had curtesy of Ina Garten and my mom :)

Meet Ava

A teeny, tiny grey puppy joined our family and we are so excited about the adventures to come. Meet Ava! She was born August 17, so she’s 7 weeks old. Ava is a Blue Lacy, the official state dog of Texas and will grow to be about 40lbs. Blue Lacys are known for being great hunting dogs :)

HBD to Claire and Ross!

Such a fun birthday weekend for two of my favorites! Claire turned 8 and Ross turned… more than 8 :)  Date night picture--
